They make the perfect afternoon pick-me-up or you can have them with breakfast, since they are coffee after all. This is a fantastic idea when the weather is too hot to think and you need ice. cold. coffee. NOW.
Iced Coffee Popsicles
2 shots espresso
1 cup milk/half-and-half (I prefer full fat milk, makes a creamier treat)
1/4 cup simple syrup
Mix together, freeze overnight in a popsicle mold.
But wait.. you don’t like your coffee sweet? Omit the simple syrup, add more milk. Or more coffee. Add a shot of chocolate syrup. Or vanilla. Or you know whats nice? Coconut milk. Or… what I am saying is, make these to your taste, the same way you take your coffee. Endlessly customizable and a really fantastic summertime treat.
